Oh my gosh, it’s day 1!!! I’m so excited. I thought about posting my before pics, but I think I will save those for the end and post them with my after pics.
I will admit, I have had a week to get back in the groove of things. Last week I started the week a 3 day refresh and then I have been loosely following the 21 Day Fix eating plan and workouts. But today we officially start our challenge group, so today officially starts my 21 days!
I started off the morning with Total Body Cardio and I will admit I had a pretty negative thought when I started…. “Who wants to start their Monday with cardio?”, but I kept going and by the time I was warmed up I was feeling great and all the negative thoughts left my mind. I was so happy when I got it done, I felt accomplished and strong.
Did you know it’s National Pancake Day? It seems like there is a National “something” Day everyday! In honor of National Pancake Day, I decided to make my kiddo pancakes for breakfast. Have you ever tried Kodiak Cakes pancakes? They are great! When you make them with milk and eggs they are packed with protein. We ate all the eggs yesterday for lunch, so I only added milk to mine this morning. Have you ever tried Fairlife milk? It’s pretty awesome. It’s high protein and low carb so 8 oz of skim milk counts as 1/2 a yellow and 1/2 a red. It’s also lactose free. It’s the only milk I drink now. After my workout, I refueled with a guilt free pancake with some almond butter and banana. (1 Yellow, 3 TSP, 1 Purple)
My morning snack is something you will see a lot of… my shakeology. It’s not the prettiest picture, but it is yummy! My favorite flavor is the vegan chocolate. Well, I won’t say it’s my favorite. I really love the Cafe Latte also, but since I turned 41 my digestive system has decided there are a lot of things it doesn’t like anymore, and the regular Shakeology is one of them. It gives me gas pretty bad….but the vegan flavors go down just fine. I think it is possibly the whey protein in the regular flavors that gives me trouble. Anyway… back to my snack… vegan chocolate shakeology mixed with some instant coffee and 1/2 of a frozen banana. Oh my gosh this combo is to die for. I could drink this every day… oh wait! I do!!!! (1 Red and 1 Purple)
Lunch was so yummy! I’ve always been afraid of carbs, I felt like I couldn’t control myself when I ate carbs and I couldn’t lose weight if I ate carbs. Well, I’m giving this program 100%, I’m doing it like it tells me too and that means I get to eat carbs in moderation, and I feel like I can actually stick the the “in moderation” part because of the containers. Alright lunch…. 1/2 a baked potato, some ham, broccoli and a blue container of shredded cheese. So good and so filling! (1 Green, 1 Red, 1 Blue, and 1 Yellow)
I already have dinner planned out, so my afternoon snack was the remainder of my containers for the day. I had 1 red, 1 green, and 1/2 of a purple left, so I looked through my fridge and found some deli turkey slices (I only had enough for 1/2 of a red though), some carrots and some strawberries. Easy, filling snack!
I did some meal prepping this weekend. I made some 21 Day Fix chili on Friday and roasted some broccoli, so that is dinner tonight. I love it when dinner is easy and I don’t have to think about it. As I was eating it, I was telling my husband it felt like a healthy TV dinner. If you want to try out the chili, check it out here. I used ground beef instead of turkey and I doubled the recipe. The chili works out to 1 Red, 1 Yellow, 1 Green, 1/2 purple because of the pureed pumpkin, add in my broccoli and I had 2 greens with dinner.
There you have my first day of my 21 Day Fix program. I feel pretty good about today and I can’t wait for tomorrow. Now it’s off to bed because I have a training run in the morning! Good night y’all!
